Universal Orlando Resort offers such a wide range of cuisine, especially throughout the parks and inside Universal CityWalk. Universal Orlando Resort also has a special pair that works together to create some of the amazing dishes that guests get to experience.

The Colón Brothers, Marcos and Chris, are a Puerto Rican chef pair that have worked together very closely at Universal Orlando Resorts for over 20 years! Discover Universal Blog states that the duo has had a hand in opening almost every restaurant that is currently in Universal CityWalk and the upcoming Universal Epic Universe restaurants. Currently Chef Marcos is the executive chef and director of culinary operations at the upcoming Universal Epic Universe which is a huge deal! “Chef Chris is the executive sous chef for research and development for Universal Orlando Resort” as stated by Discover Universal Blog. The blog also mentions that Chef Marco always wanted his career to be while Chef Chris started with helping his mom in the kitchen while Chef Marco was in school.
The new flavors that are introduced to the parks and resorts to celebrate Hispanic and Latino heritage are brought by the dishes that brothers enjoyed in their childhood, and now we get to enjoy those flavors in our dishes! Let’s see what this year’s limited-time dining offerings will bring.
Starting at Universal CityWalk, a favorite of mine is Antojitos Authentic Mexican food always brings the taste and the drinks. The Chalupas and Strawberry Tamales are the limited menu items. The Chalupas are made with chicken tinga, yellow rice, refried beans and topped with lettuce, cilantro, and salsa verde. The Strawberry Tamales would probably be a favorite of mine if I could try it this year. Made with freeze dried berries that are mixed with lime coconut cream cheese and a chocolate mint. YUM!

A favorite location for the guests is The Cowfish Sushi Burger Bar. The Heritage Roll is a yellow rice soy wrap that is filled with a marinated steak, shrimp, and cream cheese. The roll is then topped with avocado and sweet plantain and a green onion aioli drizzle.
The final location inside Universal CityWalk is Voodoo Doughnut. The Spicy Mango Donut has graced the menu featuring a spicy mango filling and then dipped in a red vanilla icing. It is topped with spicy dried mango.

Inside Universal Islands of Adventure guests will find the fabulous Confisco Grille. The two limited dishes are El Jibarito Sandwich and Carne Guisada. The Carne Guisada comes with rice, avocado, and sweet plantains. El Jibarito Sandwich is a Puerto Rican spiced roasted pork that is served between two plantains that have been fried and topped with a cilantro garlic aioli sauce, swiss cheese, lettuce, pickled red onions, and tomatoes.
One of the only locations inside Universal Studios Florida is Chez Alcatraz. A Pina Colada Cake is made with a soft pineapple cake that is topped with a caramel and rum glaze, cherry, and toasted coconut.
There are two restaurants, one in Universal Studios Orlando and one in Universal Islands of Adventure, that are offering the same two items. Backwater Bar, inside Universal Islands of Adventure, and Chez Alcatraz, inside Universal Studios Orlando, will both have a Frozen Pineapple Caipirinha and the Arandano Ranch Water. The Frozen Pineapple Caipirinha is crafted with Pitu Cachaca, pineapple juice, lime juice, and simple syrup. The final item, Arandano Ranch Water is made with Montelobos Espadin joven with Cuervo Tradicional silver tequila and mixed with hibiscus extract, lime juice, and Topo Chico Sabores.
