The Executive Chef aboard the Caribbean Princess doesn’t just whip up your favorites from the galley—they often have decades of global culinary experience. Many have worked in five-star resorts, Michelin-starred restaurants, or alongside world-renowned chefs before bringing their talent to sea.
Some have even cooked for royalty, heads of state, and celebrities—though we’ll never get the full guest list.

Our Chef’s Dinner aboard the Caribbean Princess on April 3, 2025, was nothing short of spectacular. Here’s a breakdown of the evening's indulgent feast:
Hors D'Oeuvres & Champagne - Veuve Clicquot Brut Yellow Label
Paired with delicate appetizers, this signature Champagne welcomed us into the evening with its crisp, elegant bubbles. We enjoyed this in the galley after a special tour surrounded by fruit, chocolate, and ice sculptures.

First Course - Maine Lobster Mosaic
A symphony of flavors, this luxurious lobster dish was paired with Hackleback Caviar, adding an extra layer of decadence. I LOVED this one!

Second Course - Foie Gras on Toasted Brioche
Served with caramelized calvados apple tourne, demi-glace, and crisp tortilla threads, this course was a delicate blend of sweet, savory, and crunchy. Paired with Shafer Red Shoulder Ranch Chardonnay from California, it was a perfect balance of richness and refreshment. Disclaimer: this was either loved by the guests or not; I’ll let you decide for yourself which!

Soup Course- Seafood Bisque with Brandy Cream
This velvety bisque was accented by oysters Rockefeller and mussels in white wine, all resting atop a bed of Himalayan salt, lavender, and pink peppercorns for a fragrant and textural contrast.

Interlude - Entremet: Lemon Sorbet & Champagne
A refreshing palate cleanser that included tangy lemon sorbet paired with Champagne—light, bright, and effervescent.
Main Course - Guests could choose from two indulgent options:
Dessert Course - Lemon Mousse
This light yet decadent dessert included a citrus hazelnut financier, lime cremeux, and a hazelnut crumble. The perfect combination of tangy and nutty, it was both refreshing and satisfying. Paired with Elderton Botrytis Golden Semillon from Barossa Valley, Australia, this wine’s sweetness balanced the tartness of the mousse beautifully.

Coffee or Tea
To finish off the evening, we were treated to Chef Nageswar’s Homemade Gourmandises—a selection of sweet treats to accompany a choice of coffee, tea, or herbal tea.
The Chef’s Dinner embodies what makes Princess Cruises so beloved: elevated experiences that celebrate travel, culture, and connection. Dining becomes a shared story, one that you’ll be telling long after the last bite of crème brûlée.
