As travel advisors, it’s our job to go beyond the glossy brochures and get a true feel for what our clients can expect. During my recent stay at the newly opened Sandals St. Vincent, I made it a point to explore as many of the dining options as possible—and I was seriously impressed.
At many resorts, food can be hit or miss. But at Sandals St. Vincent, the culinary experience stands out as a major highlight. Whether you're looking for beachy bites, fine dining, global flavors, or late-night treats, this property has it all.

We touched down, checked in, and before unpacking a single bag, made a beeline for the Jerk Shack. This open-air spot serves authentic jerk chicken and pork, and it quickly became one of my favorite casual go-tos. The chicken was perfectly spiced, juicy, and served hot off the grill—exactly what you want after a long travel day. The menu is small, but they also have Jamaican patties, roasted sweet potatoes, bread and a few other items.


Dinner that evening was at Scrimshaw, the resort’s sustainable seafood concept. I ordered scallops, which were seared to perfection and paired with a fresh, crisp salad. The menu is seafood-forward with an emphasis on local, responsibly sourced ingredients. The service was attentive, and the open-air design of the space made for a perfect first evening.
They serve breakfast too, so I returned to Scrimshaw on our final morning for breakfast, where I had a veggie omelet and coffee overlooking the ocean—a peaceful way to ease into our departure day.


The following afternoon, we lunched at Parisol, Sandals St. Vincent’s Mediterranean-inspired beach club restaurant. The ceviche was one of the freshest dishes I had during the trip, and the watermelon margarita was light, refreshing, and not overly sweet.
Their menu leans into light, coastal fare with a tropical twist. I added a fresh green salad and appreciated that the options here were both indulgent and healthy. Others in the group has burgers, chicken sandwiches, Mahi bites, and the marinated skirt steak.
Parisol also serves both breakfast and lunch.


For dinner, we ventured to Gatsu Gatsu, a Japanese-inspired sushi venue that brings a trendy, modern flair. Sushi is my favorite food and I always look forward to visiting the Sushi restaurants at Sandals resorts. I ordered several types of nigiri and specialty rolls, while others at the table went for more elaborate combos, edamame, and even some non-sushi dishes for those less adventurous. The vibe is high-energy but still upscale, and the quality of the fish was top-notch. This restaurant was a clear standout and a must-do for anyone who enjoys Japanese cuisine.

Our last full day included a mid-day stop at Sora, the international buffet. Buffets can be a gamble at some resorts, but this one was elevated—think shrimp cocktail, a carving station with roasted meats, a salad bar with tons of toppings, and rotating hot dishes that felt more like plated entrées than mass production. It’s a great option for guests who want to try a little of everything without committing to a sit-down meal.

We closed the trip with dinner at Butch’s Chophouse, the signature steakhouse brand found at many Sandals properties. Unsurprisingly, surf and turf was the runaway favorite at our table, and mine didn’t disappoint. The steak was cooked perfectly, the lobster tail buttery and tender, and the presentation elegant without being fussy. Butch’s is always a guest favorite, and this location lives up to the hype.

The only restaurant we didn’t have a chance to try was Buccan, the resort’s upscale Caribbean concept. With just three nights and so many strong dining options, we simply ran out of time, so it’s already on my list for the next trip.
